Q: We’d like to treat our out-of-town guests to some local flavor by showcasing Alaska’s cuisine in our reception menu. Any suggestions for the types of local foods and presentations?

As a caterer who has established a niche preparing local ingredients fresh onsite for events all over Alaska, I have found that cooking onsite and giving our guests food hot from the grill is the only way to go. Most wedding couples like to showcase what Alaska has to offer to their out-of-town guests … FRESH SEAFOOD! One of the most popular presentations is the cedar plank salmon where the filets are grilled and served directly on a cedar plank. Another popular dish is the beer-battered halibut that’s fried just minutes before serving. Nothing goes better accompanying local seafood than Alaska vegetables fresh off the grill and locally grown mashed potatoes.
